Mini Egg Frittatas

Sometimes it's hard to adjust back into your routine of meal prepping and healthy eating after traveling ✈️ So to jump start that routine again I prepped these ✨Mini Egg Frittatas✨ They are an easy and EGGcellent 🍳😉 breakfast idea, that you can have for the whole work week 🙌🏼They are packed with protein and tons of veggies 🍅🥬🥕 🌶 It's important to eat something for breakfast in the morning. When we wake up our bodies have been in the fasted state for too long. We need a combination of carbohydrates, protein, and fat to refuel our bodies, and have the energy to sustain the busy day! 💪🏼



Ingredients

12 Eggs

3/4 Cup Almond Milk

1 Container Grape Tomatoes

3/4 Cup Baby Spinach Chopped

1 Orange Pepper Chopped

1 Yellow Onion Chopped

Cooking Spray


Directions

1. Preheat oven to 350 Degrees

2.Grease muffin tin with cooking spray

3.Whisk eggs and almond milk in a large mixing bowl.

4. Wash and chop all vegetables

5. Add vegetables to egg mixture

6. Fill muffin tins to the top with egg and vegetable mixture.

7. Place in oven for 20 min or until golden brown.

8. Let cool for 5 minutes and enjoy!


P.S. You can eat these either warm or cold!
